Ingredients

  • 3 cups cooked, cold rice
  • 5 garlic cloves, minced
  • 2 scallions, sliced
  • 2 tbsp neutral oil
  • 1 tbsp soy sauce
  • 2 eggs
  • Salt and white pepper to taste

Instructions

  1. Heat the oil and fry the garlic until lightly golden and fragrant.
  2. Add the cold rice, breaking up clumps, and stir-fry over high heat for 4–5 minutes.
  3. Season with soy sauce, salt, and white pepper, then fold in the scallions.
  4. In a separate pan, fry the eggs to your liking.
  5. Plate the rice and top each portion with a fried egg.
