Ingredients

  • 2 lb skirt steak
  • Juice of 2 limes lime juice
  • Juice of 1 orange orange juice
  • 3 cloves garlic, minced
  • 0.5 C fresh cilantro, chopped
  • 0.33 C olive oil
  • 6 oz light beer
  • 1 tsp kosher salt
  • Kosher salt to taste kosher salt

Instructions

  1. Combine lime juice, orange juice, garlic, cilantro, olive oil, beer, and salt in a bowl or Ziploc bag. Add the steak and coat evenly. Marinate 2–4 hours in the refrigerator, up to 6 hours.
  2. Preheat grill to high heat. Immediately before grilling, season with kosher salt. Remove from marinade and pat lightly to remove excess moisture. Grill 2–4 minutes per side until medium-rare to medium.
  3. Rest 5–10 minutes, then slice thinly against the grain.
  4. Serve with warm tortillas, grilled onions, salsa tatemada, and lime wedges.
