Beef Bourguignon

Ingredients
- 1.5kg beef chuck, cubed
- 200g bacon, diced
- 1 bottle red wine
- 2 cups beef stock
- 3 carrots, sliced
- 1 onion, diced
- 3 cloves garlic
- 250g pearl onions
- 250g mushrooms
- 2 tbsp tomato paste
- Bay leaf, thyme
- Flour, butter
Instructions
- Brown bacon, remove; brown beef in batches in the fat, remove.
- Sauté carrots and onion; add garlic and tomato paste.
- Return beef and bacon, sprinkle with flour, stir to coat.
- Add wine and stock, bay leaf, and thyme; bring to a simmer.
- Cover and cook low (oven or stovetop) 2.5-3 hours until beef is tender.
- Sauté pearl onions and mushrooms separately; stir in near the end.
- Adjust seasoning and serve with crusty bread or mashed potatoes.
