Beef Bourguignon

Ingredients

  • 1.5kg beef chuck, cubed
  • 200g bacon, diced
  • 1 bottle red wine
  • 2 cups beef stock
  • 3 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic
  • 250g pearl onions
  • 250g mushrooms
  • 2 tbsp tomato paste
  • Bay leaf, thyme
  • Flour, butter

Instructions

  1. Brown bacon, remove; brown beef in batches in the fat, remove.
  2. Sauté carrots and onion; add garlic and tomato paste.
  3. Return beef and bacon, sprinkle with flour, stir to coat.
  4. Add wine and stock, bay leaf, and thyme; bring to a simmer.
  5. Cover and cook low (oven or stovetop) 2.5-3 hours until beef is tender.
  6. Sauté pearl onions and mushrooms separately; stir in near the end.
  7. Adjust seasoning and serve with crusty bread or mashed potatoes.
