Beef Stroganoff

Ingredients

  • 600g beef sirloin, sliced thin
  • 250g mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic
  • 2 tbsp flour
  • 2 cups beef stock
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • Egg noodles
  • Butter

Instructions

  1. Sear beef in batches over high heat; set aside.
  2. Sauté onion and mushrooms in butter until golden.
  3. Add garlic and flour, cook 1 minute.
  4. Whisk in stock, simmer until thickened.
  5. Stir in sour cream and mustard, then return beef; heat through (don't boil).
  6. Serve over buttered egg noodles.
