Ingredients

  • 3 cups cold cooked rice
  • 2 chicken breasts, diced
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 green onions
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • Vegetable oil
  • Garlic

Instructions

  1. Cook chicken in oil until done; set aside.
  2. Scramble eggs in the same pan; set aside.
  3. Stir-fry garlic, peas, and carrots briefly.
  4. Add rice, breaking up clumps, stir-fry until heated through.
  5. Return chicken and eggs, add soy sauce and green onions, toss to combine.
  6. Finish with sesame oil.
