Ingredients
- 3 cups cold cooked rice
- 2 chicken breasts, diced
- 2 eggs, beaten
- 1 cup frozen peas and carrots
- 3 green onions
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- Vegetable oil
- Garlic
Instructions
- Cook chicken in oil until done; set aside.
- Scramble eggs in the same pan; set aside.
- Stir-fry garlic, peas, and carrots briefly.
- Add rice, breaking up clumps, stir-fry until heated through.
- Return chicken and eggs, add soy sauce and green onions, toss to combine.
- Finish with sesame oil.
