- 2 chicken breasts
- 8 cups chicken stock
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic
- 2 cups egg noodles
- Fresh parsley
- Bay leaf
Instructions
- Simmer chicken in stock with bay leaf until cooked through, about 20 minutes; remove and shred.
- Sauté onion, carrot, celery, and garlic in a separate pot until soft.
- Add stock back in along with shredded chicken; simmer 10 minutes.
- Add noodles and cook until tender.
- Season to taste, finish with parsley.
