Ingredients

  • 2 chicken breasts
  • 8 cups chicken stock
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic
  • 2 cups egg noodles
  • Fresh parsley
  • Bay leaf

Instructions

  1. Simmer chicken in stock with bay leaf until cooked through, about 20 minutes; remove and shred.
  2. Sauté onion, carrot, celery, and garlic in a separate pot until soft.
  3. Add stock back in along with shredded chicken; simmer 10 minutes.
  4. Add noodles and cook until tender.
  5. Season to taste, finish with parsley.
