Ingredients
- 240 g all-purpose flour or bread flour
- 162.5 g warm water
- 3.5 g instant yeast
- 8 g sugar
- 7 g salt
- 21 g olive oil
- 4 tbsp mayonnaise
- 4 tbsp Greek yogurt
- 2 tbsp lemon juice
- 1 clove garlic clove, minced
- , to taste Salt & black pepper
- (optional) Fresh or dried dill
- 225 g chicken breast or thigh, cut small
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.75 tsp paprika or cayenne
- 0.5 tsp black pepper
- 0.75 tsp salt
- 1 tbsp olive oil
- 1 capsicum, sliced
- 1 small onion, sliced
- 175 g mozzarella, shredded
- as needed Flour + fine semolina for shaping
Instructions
- Mix warm water, yeast & sugar. Let sit 5–10 min until frothy.
- Add flour, salt & oil. Mix to a shaggy dough, cover & rest 30 min.
- Sauté chicken with spices in olive oil until cooked. Set aside.
- Oil hands, stretch & fold dough, rest 30 min. Repeat twice (3 rounds total).
- Mix mayo, yogurt, lemon juice, garlic, dill, salt & pepper. Chill.
- Preheat oven & tray/stone to 250°C (475°F). Stretch dough gently, flatten center only and flatten it as thin as possible.
- Spread ranch, add chicken, capsicum, onion & cheese.
- Slide onto hot tray, bake 8–12 min until bubbly & golden.
- Drizzle extra ranch & enjoy!
