Ingredients

  • 1 cup white rice
  • 1.5 cup water
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 0.5 cup chopped cilantro
  • 2 Tbsp lime juice
  • 1 tsp lime zest
  • 2 large avocados
  • 2-3 , sliced green onions
  • 2 Tbsp chopped cilantro
  • 0.5 lemon lemon
  • Garlic salt, to taste garlic salt
  • Hot sauce, to taste hot sauce

Instructions

  1. Add the rice, water, olive oil & salt to a pot & bring it to a boil.
  2. Once boiling, cover & simmer on low for 15 minutes.
  3. Mix the mashed avocado, green onions & cilantro together.
  4. Add a squeeze of lemon & season with garlic salt & hot sauce to taste.
  5. Fluff the rice with a fork then stir in the cilantro, lime juice & lime zest.
  6. Taste & adjust seasonings for the rice if needed.
