Ingredients
- 1 cup white rice
- 1.5 cup water
- 1 Tbsp olive oil
- 1 tsp salt
- 0.5 cup chopped cilantro
- 2 Tbsp lime juice
- 1 tsp lime zest
- 2 large avocados
- 2-3 , sliced green onions
- 2 Tbsp chopped cilantro
- 0.5 lemon lemon
- Garlic salt, to taste garlic salt
- Hot sauce, to taste hot sauce
Instructions
- Add the rice, water, olive oil & salt to a pot & bring it to a boil.
- Once boiling, cover & simmer on low for 15 minutes.
- Mix the mashed avocado, green onions & cilantro together.
- Add a squeeze of lemon & season with garlic salt & hot sauce to taste.
- Fluff the rice with a fork then stir in the cilantro, lime juice & lime zest.
- Taste & adjust seasonings for the rice if needed.
