Ingredients
- 1kg beef chuck, cubed
- 3 carrots, sliced
- 3 potatoes, cubed
- 1 onion, diced
- 3 cloves garlic
- 4 cups beef stock
- 2 tbsp tomato paste
- 2 tbsp flour
- Bay leaf, thyme
Instructions
- Brown beef in batches; set aside.
- Sauté onion and garlic, add tomato paste and flour, cook 1 minute.
- Add stock, scraping up browned bits; return beef.
- Add bay leaf and thyme; simmer covered 1.5 hours.
- Add carrots and potatoes; cook 30 more minutes until tender.
- Season to taste and serve.
