Classic Beef Stew

Ingredients

  • 1kg beef chuck, cubed
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 1 onion, diced
  • 3 cloves garlic
  • 4 cups beef stock
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • Bay leaf, thyme

Instructions

  1. Brown beef in batches; set aside.
  2. Sauté onion and garlic, add tomato paste and flour, cook 1 minute.
  3. Add stock, scraping up browned bits; return beef.
  4. Add bay leaf and thyme; simmer covered 1.5 hours.
  5. Add carrots and potatoes; cook 30 more minutes until tender.
  6. Season to taste and serve.
