- 2 heads romaine lettuce, chopped
- 1/2 cup parmesan, shaved
- 1 cup croutons
- 2 anchovy fillets
- 1 clove garlic
- 1 egg yolk
- 1 tbsp Dijon mustard
- 1 lemon, juiced
- 1/2 cup olive oil
- Black pepper
Instructions
- Mash anchovy and garlic into a paste.
- Whisk in egg yolk, mustard, and lemon juice.
- Slowly whisk in olive oil until emulsified; season with pepper.
- Toss romaine with dressing, croutons, and shaved parmesan.
