Ingredients

  • 2 heads romaine lettuce, chopped
  • 1/2 cup parmesan, shaved
  • 1 cup croutons
  • 2 anchovy fillets
  • 1 clove garlic
  • 1 egg yolk
  • 1 tbsp Dijon mustard
  • 1 lemon, juiced
  • 1/2 cup olive oil
  • Black pepper

Instructions

  1. Mash anchovy and garlic into a paste.
  2. Whisk in egg yolk, mustard, and lemon juice.
  3. Slowly whisk in olive oil until emulsified; season with pepper.
  4. Toss romaine with dressing, croutons, and shaved parmesan.
