Classic Chicken Pot Pie

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 cups chicken stock
  • 1 cup milk
  • 2 cups mixed vegetables (carrots, peas, celery)
  • 1 onion, diced
  • 2 pie crusts

Instructions

  1. Sauté onion and vegetables in butter until softened.
  2. Sprinkle flour over, cook 1 minute.
  3. Gradually whisk in stock and milk; simmer until thickened.
  4. Stir in chicken; season to taste.
  5. Pour filling into a bottom pie crust, top with second crust, seal and vent.
  6. Bake at 400°F (200°C) for 35-40 minutes until golden.
