Ingredients

  • 450g elbow macaroni
  • 4 tbsp butter
  • 4 tbsp flour
  • 3 cups milk
  • 3 cups shredded sharp cheddar
  • 1 cup gruyère (optional)
  • Salt, pepper, mustard powder

Instructions

  1. Cook macaroni until al dente; drain.
  2. Melt butter, whisk in flour to make a roux, cook 1 minute.
  3. Gradually whisk in milk, cook until thickened.
  4. Remove from heat, stir in cheese until melted; season with salt, pepper, and mustard powder.
  5. Combine with pasta and serve, or top with breadcrumbs and bake at 375°F (190°C) for 15-20 minutes.
