- 400g spaghetti
- 150g pancetta or guanciale, diced
- 4 large eggs
- 1 cup grated pecorino romano
- 2 cloves garlic
- Black pepper
- Salt
Instructions
- Cook spaghetti in salted boiling water until al dente; reserve 1 cup pasta water.
- Sauté pancetta with garlic until crisp; discard garlic.
- Whisk eggs with pecorino and lots of black pepper.
- Toss hot drained pasta with pancetta off heat, then quickly stir in egg mixture, adding pasta water to create a creamy sauce.
- Serve immediately with extra cheese and pepper.
