Classic Spaghetti Carbonara

Ingredients

  • 400g spaghetti
  • 150g pancetta or guanciale, diced
  • 4 large eggs
  • 1 cup grated pecorino romano
  • 2 cloves garlic
  • Black pepper
  • Salt

Instructions

  1. Cook spaghetti in salted boiling water until al dente; reserve 1 cup pasta water.
  2. Sauté pancetta with garlic until crisp; discard garlic.
  3. Whisk eggs with pecorino and lots of black pepper.
  4. Toss hot drained pasta with pancetta off heat, then quickly stir in egg mixture, adding pasta water to create a creamy sauce.
  5. Serve immediately with extra cheese and pepper.
