Classic Tiramisu

Ingredients
- 6 egg yolks
- 3/4 cup sugar
- 500g mascarpone
- 1.5 cups strong coffee, cooled
- 2 tbsp coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder
Instructions
- Whisk egg yolks and sugar over a double boiler until pale and thick (or use a stabilized method); cool slightly.
- Fold in mascarpone until smooth.
- Mix coffee with liqueur if using.
- Dip ladyfingers briefly in coffee mixture, layer in a dish.
- Spread half the mascarpone mixture over, repeat layers.
- Chill at least 4 hours, ideally overnight.
- Dust with cocoa powder before serving.
