Ingredients
- 200g spaghetti or penne
- 400g canned chopped tomatoes
- 3 garlic cloves, sliced
- 60ml heavy cream
- 2 tbsp olive oil
- 1 small handful fresh basil
- 40g parmesan, grated
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente.
- Meanwhile, warm the olive oil in a wide pan and soften the garlic for 1 minute without browning.
- Add the chopped tomatoes, season, and simmer for 8–10 minutes until thickened.
- Stir in the cream and half the parmesan, then loosen with a splash of pasta water.
- Toss the drained pasta through the sauce, fold in torn basil, and finish with the remaining parmesan.
