Creamy Tomato Basil Pasta

A weeknight one-pan pasta built from pantry staples: ripe tomatoes, garlic, and a splash of cream finished with fresh basil.

Ingredients

  • 200g spaghetti or penne
  • 400g canned chopped tomatoes
  • 3 garlic cloves, sliced
  • 60ml heavy cream
  • 2 tbsp olive oil
  • 1 small handful fresh basil
  • 40g parmesan, grated
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Meanwhile, warm the olive oil in a wide pan and soften the garlic for 1 minute without browning.
  3. Add the chopped tomatoes, season, and simmer for 8–10 minutes until thickened.
  4. Stir in the cream and half the parmesan, then loosen with a splash of pasta water.
  5. Toss the drained pasta through the sauce, fold in torn basil, and finish with the remaining parmesan.
