Ingredients
- 2 cups dried chickpeas, soaked overnight (not canned)
- 1 onion, chopped
- 4 cloves garlic
- 1 cup parsley
- 1 cup cilantro
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp baking powder
- Flour as needed
- Oil for frying
Instructions
- Drain soaked chickpeas; pulse in a food processor with onion, garlic, herbs, and spices until finely chopped but not pureed.
- Add baking powder and a bit of flour if needed to bind; chill 30 minutes.
- Form into small balls or patties.
- Fry in hot oil until golden and crisp, about 3-4 minutes.
- Drain on paper towels; serve in pita with tahini sauce and salad.
