Ingredients

  • 2 cups dried chickpeas, soaked overnight (not canned)
  • 1 onion, chopped
  • 4 cloves garlic
  • 1 cup parsley
  • 1 cup cilantro
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tsp baking powder
  • Flour as needed
  • Oil for frying

Instructions

  1. Drain soaked chickpeas; pulse in a food processor with onion, garlic, herbs, and spices until finely chopped but not pureed.
  2. Add baking powder and a bit of flour if needed to bind; chill 30 minutes.
  3. Form into small balls or patties.
  4. Fry in hot oil until golden and crisp, about 3-4 minutes.
  5. Drain on paper towels; serve in pita with tahini sauce and salad.
