Ingredients

  • 4 large onions, sliced
  • 4 tbsp butter
  • 6 cups beef stock
  • 1/2 cup dry white wine
  • 2 bay leaves
  • Thyme
  • Baguette slices
  • Gruyère cheese, grated

Instructions

  1. Slowly caramelize onions in butter over low heat, 45 minutes, stirring occasionally.
  2. Deglaze with wine; add stock, bay leaves, and thyme.
  3. Simmer 20 minutes; season to taste.
  4. Ladle into oven-safe bowls, top with baguette slice and cheese.
  5. Broil until cheese is bubbly and golden.
