- 6 cups beef stock
- 1/2 cup dry white wine
- 2 bay leaves

- Baguette slices
- Gruyère cheese, grated
Instructions
- Slowly caramelize onions in butter over low heat, 45 minutes, stirring occasionally.
- Deglaze with wine; add stock, bay leaves, and thyme.
- Simmer 20 minutes; season to taste.
- Ladle into oven-safe bowls, top with baguette slice and cheese.
