Ingredients

  • 2 mini Persian cucumbers
  • 2 green onions
  • handfuls cilantro
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon kosher salt
  • 1 pound extra lean ground beef
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon gochujang
  • 1 tablespoon Korean chile flakes
  • 3 packs Trader Joe’s knife cut noodles
  • sauce packets noodle sauce packets
  • 3 tablespoons tahini
  • 0.5 cup noodle cooking water
  • as needed toasted sesame seeds
  • as needed TJ crunchy chili onion

Instructions

  1. Thinly slice 2 mini Persian cucumbers into matchsticks.
  2. Thinly slice the green parts of 2 green onions.
  3. Chop a couple handfuls of cilantro.
  4. In a bowl, toss the sliced cucumbers, green parts of green onions, chopped cilantro, 1 tablespoon of rice vinegar, and 1/2 teaspoon of kosher salt. Set aside.
  5. Brown and fully cook 1 pound of extra lean ground beef.
  6. Add 2 tablespoons of rice vinegar, 2 tablespoons of maple syrup, 1 tablespoon of gochujang, 1 tablespoon of Korean chile flakes, 1/2 teaspoon of kosher salt, and the white parts of the green onion to the cooked beef.
  7. Cook 3 packs of Trader Joe’s knife cut noodles according to package directions.
  8. Drain the noodles, reserving about 1/2 cup of the cooking water.
  9. Toss the cooked noodles with their sauce packets, 3 tablespoons of tahini, and about 1/2 cup of the reserved noodle cooking water.
  10. Mix the prepared noodles, spicy beef, and herby cucumbers together.
  11. Serve, optionally topping with toasted sesame seeds and TJ crunchy chili onion.
