Ingredients
- 1 cucumber
- 600 g cherry tomatoes
- 2 capsicum
- handful parsley
- 1 fried onion
- 2 tins roast chickpeas
- 2 tins roast corn
- 5.5 tbsp Greek yoghurt
- 1 lime
- handful dill
- Swirl of oil olive olive oil
- Garlic powder garlic powder
- Pepper pepper
- Water water
Instructions
- Chop the cucumber, tomatoes, capsicum and parsley and put into a bowl.
- Roast the chickpeas and corn in the oven until golden.
- Chop the onion and pan fry until cooked.
- Once chickpeas, corn and onion are cool, add to the salad.
- To make the dressing add all the ingredients to a bowl, adding garlic powder and pepper so preferred seasoning. Mix and add water to thin the mixture to desired consistency.
- Add dressing to the salad and mix through.
- Enjoy!
