Ingredients
- 2 green onions
- 2 tsp grated ginger
- 2 tsp grated lemongrass
- 3 tbsp butter
- 2 cup white rice
- 2.5 cup chicken stock
- 2 tbsp cilantro
- 2-3 chicken thighs
- 2 eggs
- 1 cup flour
- 0.5 cup cornstarch
- 2 tsp salt
- 1 tsp pepper
- 2 tsp garlic powder
- Oil for frying oil
- Juice of 1 lemon lemon juice
- Zest of 1/2 lemon lemon zest
- 2 tbsp honey
- 2 garlic cloves
- 0.5 tsp salt
- 0.5 tsp pepper
- 2 tbsp butter
Instructions
- For the rice, sauté the white parts of the green onions, grated ginger, and grated lemongrass in 3 tablespoons of butter in a pot until fragrant.
- Add 2 cups of white rice and 2 1/2 cups of chicken stock to the pot. Bring to a simmer and let it cook while preparing the chicken.
- In one bowl, whisk 2 eggs. In another bowl, combine 1 cup of flour, 1/2 cup of cornstarch, 2 tsp salt, 1 tsp pepper, and 2 tsp garlic powder.
- Dip the chicken thighs into the whisked eggs, then dredge them thoroughly in the flour mixture, ensuring they are nicely coated.
- Heat oil for frying in a pan. Fry the coated chicken thighs until they are nice and golden brown and cooked through.
- While the chicken is frying, stir 2 tablespoons of cilantro into the simmering rice.
- For the sauce, combine the juice of 1 lemon, zest of 1/2 lemon, 2 tablespoons of honey, 2 grated garlic cloves, 1/2 tsp salt, 1/2 tsp pepper, and 2 tablespoons of butter in a bowl. Mix well.
- Once the chicken is fried, dunk it into the prepared lemon garlic sauce to coat.
- Serve the lemon garlic chicken over the cooked rice to create a rice bowl.
