- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 1 tbsp lemon zest
- 3 tbsp fresh lemon juice
- 1 tsp pure vanilla extract
- 2.5 tsp gelatin powder
- 3 tbsp cold water
- pinch fine sea salt
- 1 lemon lemon
- 0.25 cup granulated sugar
- 0.25 cup water
- 1 tbsp honey
- 3 tbsp extra virgin olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 0.25 tsp red chili flakes
- pinch flaky sea salt
- as needed Fresh mint sprigs
- as needed Extra fresh lemon zest
- as needed Extra red chili flakes
- as needed Flaky sea salt
Instructions
- Bloom the gelatin in cold water and let it sit for 5 minutes until completely spongy and soft.
- Heat heavy cream, whole milk, and sugar in a saucepan over medium heat until steaming and dissolved.
- Add lemon zest to the warm cream, cover, and let it steep off the heat for 15 minutes for deep citrus flavor.
- Strain the cream mixture through a fine sieve, then return to the pan and warm gently again.
- Whisk the bloomed gelatin into the warm cream until completely melted and smooth throughout.
- Stir in fresh lemon juice, vanilla extract, and a pinch of fine sea salt for a balanced bright finish.
- Pour the silken mixture into 6 small dome molds and chill for 4 hours until completely set.
- Simmer thin lemon slices with sugar, water, and honey for 8 minutes until glossy and candied.
- Whisk olive oil with lemon zest, lemon juice, chili flakes, and flaky salt for the bright drizzle.
- Unmold each panna cotta onto a plate, crown with a candied lemon slice and mint, and finish with olive oil drizzle, zest, chili flakes, and salt.
