Ingredients

  • 1.5 lbs chicken breast
  • (contains salt) Sazon
  • as needed Garlic powder
  • as needed Paprika

  • as needed Oregano or Italian seasoning
  • as needed Black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 0.5 onion onion
  • 3 cloves garlic cloves
  • tsp salt
  • 1 can tomato paste
  • 0.5 cup sun-dried tomatoes
  • Splashes of as needed water
  • 1 cup heavy cream
  • handfuls baby spinach
  • chopped (optional) parsley

Instructions

  1. Slice chicken breast thin and season with Sazon, garlic powder, paprika, mild red chili, crushed red pepper flakes, oregano or Italian seasoning, and black pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add the seasoned chicken and cook until browned and cooked through. Remove chicken from the pan and set aside.
  3. In the same pan, add diced onion and sauté until softened, about 3-5 minutes.
  4. Add crushed garlic cloves and cook for another minute until fragrant.
  5. Stir in garlic powder, paprika, mild red chili, crushed red pepper flakes, oregano or Italian seasoning, black pepper, and salt to taste.
  6. Add the can of tomato paste and sun-dried tomatoes. Cook for a few minutes, stirring frequently, adding splashes of water as needed to create a sauce base and prevent sticking.
  7. Pour in the heavy cream and bring the sauce to a gentle simmer, stirring occasionally.
  8. Add the baby spinach and cook until wilted, about 2-3 minutes.
  9. Return the cooked chicken to the pan and toss to coat in the sauce, ensuring it's heated through.
  10. Garnish with chopped parsley, if desired.
  11. Serve the Marry Me Chicken immediately over pasta, rice, or mashed potatoes.
