Ingredients
- 2 cups romaine, chopped
- 1/2 cup grilled chicken, diced
- 1/4 cup baby cherry tomatoes, halved
- 1/2 cup red beets, diced (pre-roasted is fine)
- 1/2 cup cucumbers, diced
- 1/2 cup chickpeas
- 1/4 cup bacon, diced
- 1/4 cup sharp cheddar cheese, diced
- 1 avocado, diced
- Kosher salt and freshly cracked black pepper, to taste
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 clove garlic, roasted
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Chop all salad ingredients and combine in a bowl.
- Whisk together olive oil, red wine vinegar, lemon juice, and roasted garlic (breaking up the garlic clove so it's evenly incorporated) with salt and pepper.
- Dress the salad and serve.
