- 3 corn on the Cobb
- 0.25 cup olive oil
- 0.5 tsp salt
- 0.5 tsp smoked paprika
- 0.25 tsp chipotle chili powder
- 0.25 tsp garlic powder
- 0.25 tsp black pepper
- 3 tbs Cotija
- 2 tbs cilantro
- 0.25 cup mayonnaise
- 0.25 cup sour cream
- 0.5 lime
- 1 tsp chipotle chilies in Adobo
- 0.25 tsp smoked paprika
Instructions
- Preheat air fryer to 400 F.
- Husk corn and cut into 4 lengthwise.
- Mix olive oil with the seasonings (salt, smoked paprika, chipotle chili powder, garlic powder, black pepper) and brush corn ribs.
- Air fry for 10 minutes, flipping once halfway through.
- In the meantime, prepare the sauce by mixing all Elote sauce ingredients (mayonnaise, sour cream, lime juice and zest, salt, chipotle chilies in Adobo, garlic powder, smoked paprika, black pepper).
- Once corn has cooked, slather the sauce over, crumble some Cotija, sprinkle cilantro and enjoy!
