Ingredients

  • 3 corn on the Cobb
  • 0.25 cup olive oil
  • 0.5 tsp salt
  • 0.5 tsp smoked paprika
  • 0.25 tsp chipotle chili powder
  • 0.25 tsp garlic powder
  • 0.25 tsp black pepper
  • 3 tbs Cotija
  • 2 tbs cilantro
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.5 lime
  • 1 tsp chipotle chilies in Adobo
  • 0.25 tsp smoked paprika

Instructions

  1. Preheat air fryer to 400 F.
  2. Husk corn and cut into 4 lengthwise.
  3. Mix olive oil with the seasonings (salt, smoked paprika, chipotle chili powder, garlic powder, black pepper) and brush corn ribs.
  4. Air fry for 10 minutes, flipping once halfway through.
  5. In the meantime, prepare the sauce by mixing all Elote sauce ingredients (mayonnaise, sour cream, lime juice and zest, salt, chipotle chilies in Adobo, garlic powder, smoked paprika, black pepper).
  6. Once corn has cooked, slather the sauce over, crumble some Cotija, sprinkle cilantro and enjoy!
