Ingredients
- 3 large yellow onions
- 2 tbsp butter
- 1 tbsp vegetable oil
- 8 oz pancetta
- 2 cloves garlic cloves
- 2 tbsp white wine
- 1 tsp salt
- 0.5 tsp thyme
- 0.5 tsp fresh rosemary
- 9 oz pasta
- 3 cups beef broth
- 1 cup heavy cream
- 1 cup fresh parmigiano regianno
- 0.5 cup fresh gruyère
Instructions
- Slice the 3 large yellow onions.
- Add the sliced onions to a pot with 1 tbsp vegetable oil and 2 tbsp butter.
- Caramelize the onions by letting them get nice and brown on the bottom, then deglaze with a little bit of water. Repeat this process until the onions are nicely caramelized (approximately 10-15 minutes).
- Add 8 oz pancetta to the pot and let it get nice and crispy.
- Add 2 garlic cloves and mix everything together.
- Deglaze with 2 tbsp white wine.
- Add 1 tsp salt, 1/2 tsp thyme, and 1/2 tsp fresh rosemary.
- Add 8-10 oz dry pasta and 3 cups beef broth to the pot.
- Once the pasta is cooking, add 1 cup heavy cream and 1 cup fresh Parmigiano Reggiano.
- Add a top layer of 1/2 cup fresh Gruyère.
