Ingredients

  • 3 large yellow onions
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 8 oz pancetta
  • 2 cloves garlic cloves
  • 2 tbsp white wine
  • 1 tsp salt
  • 0.5 tsp thyme
  • 0.5 tsp fresh rosemary
  • 9 oz pasta
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup fresh parmigiano regianno
  • 0.5 cup fresh gruyère

Instructions

  1. Slice the 3 large yellow onions.
  2. Add the sliced onions to a pot with 1 tbsp vegetable oil and 2 tbsp butter.
  3. Caramelize the onions by letting them get nice and brown on the bottom, then deglaze with a little bit of water. Repeat this process until the onions are nicely caramelized (approximately 10-15 minutes).
  4. Add 8 oz pancetta to the pot and let it get nice and crispy.
  5. Add 2 garlic cloves and mix everything together.
  6. Deglaze with 2 tbsp white wine.
  7. Add 1 tsp salt, 1/2 tsp thyme, and 1/2 tsp fresh rosemary.
  8. Add 8-10 oz dry pasta and 3 cups beef broth to the pot.
  9. Once the pasta is cooking, add 1 cup heavy cream and 1 cup fresh Parmigiano Reggiano.
  10. Add a top layer of 1/2 cup fresh Gruyère.
