- 225g rice noodles
- 200g shrimp or chicken
- 2 eggs
- 3 tbsp fish sauce
- 3 tbsp tamarind paste
- 2 tbsp sugar
- 2 cups bean sprouts
- 3 green onions
- 1/4 cup crushed peanuts
- Lime wedges
- Garlic
Instructions
- Soak rice noodles in warm water until pliable; drain.
- Whisk fish sauce, tamarind paste, and sugar for the sauce.
- Stir-fry protein with garlic until cooked; push aside, scramble eggs in the pan.
- Add noodles and sauce, tossing to combine.
- Add bean sprouts and green onions, tossing briefly.
- Serve topped with peanuts and lime wedges.
