Ingredients

  • 225g rice noodles
  • 200g shrimp or chicken
  • 2 eggs
  • 3 tbsp fish sauce
  • 3 tbsp tamarind paste
  • 2 tbsp sugar
  • 2 cups bean sprouts
  • 3 green onions
  • 1/4 cup crushed peanuts
  • Lime wedges
  • Garlic

Instructions

  1. Soak rice noodles in warm water until pliable; drain.
  2. Whisk fish sauce, tamarind paste, and sugar for the sauce.
  3. Stir-fry protein with garlic until cooked; push aside, scramble eggs in the pan.
  4. Add noodles and sauce, tossing to combine.
  5. Add bean sprouts and green onions, tossing briefly.
  6. Serve topped with peanuts and lime wedges.
