- 500 g baby cucumbers
- 0.5 whole red onion
- 1 whole pomegranate
- 10 leaves fresh mint leaves
- pinch salt
- pinch sumac
- 2–3 tbsp pomegranate molasses
- 2–3 tbsp extra virgin olive oil
Instructions
- In a large bowl, combine the halved tomatoes, cucumber rings, sliced red onion, and pomegranate seeds.
- Sprinkle over the chopped mint, salt, and sumac.
- Drizzle with pomegranate molasses and extra virgin olive oil.
