  • 350–450 g , halved medley tomatoes
  • 500 g baby cucumbers
  • 0.5 whole red onion
  • 1 whole pomegranate
  • 10 leaves fresh mint leaves
  • pinch salt
  • pinch sumac
  • 2–3 tbsp pomegranate molasses
  • 2–3 tbsp extra virgin olive oil

Instructions

  1. In a large bowl, combine the halved tomatoes, cucumber rings, sliced red onion, and pomegranate seeds.
  2. Sprinkle over the chopped mint, salt, and sumac.
  3. Drizzle with pomegranate molasses and extra virgin olive oil.
  4. Gently toss everything together until well coated.
