Ingredients

  • 1 whole chicken (about 1.8kg)
  • 3 tbsp butter, softened
  • 1 lemon, halved
  • 1 head garlic, halved
  • Fresh thyme and rosemary
  • Salt and pepper

Instructions

  1. Pat chicken dry; season cavity with salt and pepper.
  2. Stuff cavity with lemon, garlic, and herbs.
  3. Rub softened butter over skin; season generously with salt and pepper.
  4. Roast at 425°F (220°C) for 60-75 minutes until internal temp reaches 165°F (74°C).
  5. Rest 10-15 minutes before carving.
