- 1 whole chicken (about 1.8kg)
- 3 tbsp butter, softened
- 1 lemon, halved
- 1 head garlic, halved
- Fresh thyme and rosemary
- Salt and pepper
Instructions
- Pat chicken dry; season cavity with salt and pepper.
- Stuff cavity with lemon, garlic, and herbs.
- Rub softened butter over skin; season generously with salt and pepper.
- Roast at 425°F (220°C) for 60-75 minutes until internal temp reaches 165°F (74°C).
- Rest 10-15 minutes before carving.
