- 2 pints cherry tomatoes
- 0.5 cup garlic cloves, peeled
- 0.25 cup extra virgin olive oil
- , to taste Sea salt
- 1 cup whipped ricotta
- 0.5 cup Parmigiano Reggiano, grated
- as needed Crushed red chili flakes

Instructions
- Roast the cherry tomatoes and peeled garlic cloves with extra virgin olive oil and sea salt.
- Cook the paccheri or other short pasta according to package directions.
- Toss the cooked pasta with the roasted cherry tomato and garlic mixture, whipped ricotta, grated Parmigiano Reggiano, crushed red chili flakes, and fresh basil. Add pasta water as needed to achieve desired consistency.
