Ingredients

  • 250g mixed mushrooms, sliced
  • 2 thick slices of crusty bread
  • 2 garlic cloves, minced
  • 100g ricotta
  • 2 tbsp olive oil
  • 1 tbsp chopped parsley
  • Salt and black pepper to taste

Instructions

  1. Toast the bread until golden and crisp.
  2. Heat the oil and fry the mushrooms over high heat until deeply browned.
  3. Add the garlic for the final minute and season well.
  4. Spread ricotta over the toast and pile the mushrooms on top.
  5. Finish with parsley, a drizzle of olive oil, and cracked pepper.
