Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic
- 1 tsp cumin
- 1 tsp paprika
- 1 can crushed tomatoes
- 6 eggs
- Feta cheese
- Cilantro or parsley
Instructions
- Sauté onion and bell pepper in olive oil until soft.
- Add garlic and spices, cook 1 minute.
- Add crushed tomatoes; simmer 10-15 minutes until thickened.
- Make wells in the sauce and crack eggs into them.
- Cover and cook until egg whites are set but yolks still runny, 6-8 minutes.
- Top with feta and herbs; serve with bread.
