Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can crushed tomatoes
  • 6 eggs
  • Feta cheese
  • Cilantro or parsley

Instructions

  1. Sauté onion and bell pepper in olive oil until soft.
  2. Add garlic and spices, cook 1 minute.
  3. Add crushed tomatoes; simmer 10-15 minutes until thickened.
  4. Make wells in the sauce and crack eggs into them.
  5. Cover and cook until egg whites are set but yolks still runny, 6-8 minutes.
  6. Top with feta and herbs; serve with bread.
