Ingredients
- 6 bone-in chicken thighs
- 500g baby potatoes, halved
- 1 lemon, sliced
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Heat the oven to 220°C (430°F).
- Toss the potatoes with half the oil, salt, and pepper on a large sheet pan.
- Rub the chicken with the remaining oil, garlic, oregano, paprika, salt, and pepper.
- Nestle the chicken among the potatoes and tuck lemon slices around the tray.
- Roast for 35 minutes until the chicken is golden and cooked through (74°C internal).
