Ingredients

  • 6 bone-in chicken thighs
  • 500g baby potatoes, halved
  • 1 lemon, sliced
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Heat the oven to 220°C (430°F).
  2. Toss the potatoes with half the oil, salt, and pepper on a large sheet pan.
  3. Rub the chicken with the remaining oil, garlic, oregano, paprika, salt, and pepper.
  4. Nestle the chicken among the potatoes and tuck lemon slices around the tray.
  5. Roast for 35 minutes until the chicken is golden and cooked through (74°C internal).
