- 200 g radishes
- 3 mini cucumbers
- 0.5 red onion
- 2 tablespoons fresh dill
- 6-8 fresh mint leaves
- pinch salt
- 0.5 lemon juice
- 1 teaspoon apple cider vinegar
- 2 tablespoons extra virgin olive oil
Instructions
- Trim radishes and cucumbers.
- Using a rolling pin, lightly smash radishes so they begin to split apart. Scratch the outside of the cucumbers with a fork to create grooves, then finely slice into rounds.
- Add all the ingredients into a jar, shake well and refrigerate for at least 30 minutes. When ready to eat, simply pour into a bowl and enjoy!
