Ingredients

  • 400g canned black beans, drained
  • 1 cup corn kernels
  • 6 small tortillas
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 lime
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Warm the oil and toast the cumin and paprika for 30 seconds.
  2. Add the black beans and a splash of water, mashing lightly, and cook for 4–5 minutes.
  3. Char the corn in a dry pan until lightly blistered.
  4. Warm the tortillas, then fill with beans and corn.
  5. Finish with a generous squeeze of lime and a pinch of salt.
