Spanish Paella

Ingredients
- 2 cups paella or short-grain rice
- 500g chicken thighs, cubed
- 300g shrimp
- 150g chorizo, sliced
- 1 onion, diced
- 1 red bell pepper, sliced
- 3 cloves garlic
- 1 can diced tomatoes
- 4 cups chicken stock
- 1/2 tsp saffron threads
- 1 cup peas
- Olive oil
Instructions
- Sear chicken and chorizo in olive oil in a paella pan; set aside.
- Sauté onion, bell pepper, and garlic until soft.
- Add tomatoes, cook a few minutes.
- Stir in rice to coat, add saffron-infused stock.
- Return chicken and chorizo; simmer without stirring until rice absorbs liquid, about 20 minutes.
- Add shrimp and peas in the last 5-7 minutes.
- Let rest 5 minutes before serving; aim for a crispy bottom layer (socarrat).
