Spanish Paella

Ingredients

  • 2 cups paella or short-grain rice
  • 500g chicken thighs, cubed
  • 300g shrimp
  • 150g chorizo, sliced
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 3 cloves garlic
  • 1 can diced tomatoes
  • 4 cups chicken stock
  • 1/2 tsp saffron threads
  • 1 cup peas
  • Olive oil

Instructions

  1. Sear chicken and chorizo in olive oil in a paella pan; set aside.
  2. Sauté onion, bell pepper, and garlic until soft.
  3. Add tomatoes, cook a few minutes.
  4. Stir in rice to coat, add saffron-infused stock.
  5. Return chicken and chorizo; simmer without stirring until rice absorbs liquid, about 20 minutes.
  6. Add shrimp and peas in the last 5-7 minutes.
  7. Let rest 5 minutes before serving; aim for a crispy bottom layer (socarrat).
