Ingredients
- 2 peaches
- 1 ball burrata
- 2.5 cups arugula
- 0.75 cup cherry tomatoes
- 0.5 cup blackberries
- 3 tbsp crushed pistachios
- 2 tbsp fresh mint leaves
- Flaky sea salt flaky sea salt
- Freshly cracked black pepper
- 1 tbsp extra-virgin olive oil
- 1 tbsp hot honey
- 1.5 tsp balsamic glaze
Instructions
- Heat a grill pan or cast-iron skillet over medium-high heat. Lightly brush peaches with olive oil and grill for 2–3 minutes per side until lightly charred and softened.
- Spread arugula on a serving platter. Arrange grilled peaches, cherry tomatoes, and blackberries around the platter.
- Place the burrata in the center.
- Scatter torn mint and crushed pistachios over the salad.
- Drizzle with olive oil, then hot honey, then balsamic glaze. Sprinkle with flaky sea salt, and black pepper.
- Tear open the burrata just before serving and enjoy immediately.
