Teriyaki Chicken

Ingredients
- 4 chicken thighs
- 1/3 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sugar
- 1 tbsp sake (optional)
- 1 tsp grated ginger
- 1 tsp cornstarch mixed with water
Instructions
- Combine soy sauce, mirin, sugar, sake, and ginger; marinate chicken 15+ minutes.
- Sear chicken skin-side down in a hot pan until golden.
- Flip and cook through.
- Add marinade to the pan, simmer until slightly reduced.
- Stir in cornstarch slurry to thicken glaze.
- Slice and serve over rice, glaze spooned on top.
