Teriyaki Chicken

Ingredients

  • 4 chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tbsp sake (optional)
  • 1 tsp grated ginger
  • 1 tsp cornstarch mixed with water

Instructions

  1. Combine soy sauce, mirin, sugar, sake, and ginger; marinate chicken 15+ minutes.
  2. Sear chicken skin-side down in a hot pan until golden.
  3. Flip and cook through.
  4. Add marinade to the pan, simmer until slightly reduced.
  5. Stir in cornstarch slurry to thicken glaze.
  6. Slice and serve over rice, glaze spooned on top.
