- 2 cups bread flour / high-protein flour
- 0.67 cup warm water
- 1 tsp instant yeast
- 2 tsp sugar
- 1 tsp salt
- 1.5 tbsp olive oil
- Store-bought tomato pizza sauce (as needed) store-bought tomato pizza sauce
- as needed Gouda cheese slices
- Shredded mozzarella shredded mozzarella
- (for finishing) Parmesan
- Olive oil drizzle olive oil
- Fresh basil or coriander fresh basil or coriander
Instructions
- Mix warm water, yeast, and sugar. Rest 5–10 minutes until foamy.
- Add olive oil, salt, and flour. Mix into a shaggy dough.
- Rest 30 minutes.
- Perform 3 stretch-and-folds, spaced 25–30 minutes apart.
- Cover and let rise 1 hour until puffy.
- Dust surface with flour + semolina.
- Stretch dough gently by hand — thin center, thicker edges.
- Do not use a rolling pin.
- Spread a thin layer of store-bought tomato sauce.
- Add shredded mozzarella.
- Arrange Gouda slices.
- Finish with a light sprinkle of Parmesan.
- Preheat oven to 250–280°C with tray inside.
- Bake 5–7 minutes until cheese is bubbling and crust is golden.
- Sprinkle more Parmesan after baking and drizzle olive oil if desired.
