Ingredients
- 2 tbsp oil
- 1 onion, diced
- 3 cloves garlic
- 1 tbsp ginger
- 2 tbsp curry powder
- 1 can coconut milk
- 2 cups mixed vegetables (potato, cauliflower, peas, carrots)
- 1 can diced tomatoes
- Cilantro
Instructions
- Sauté onion, garlic, and ginger in oil until soft.
- Add curry powder, cook 1 minute until fragrant.
- Add tomatoes and coconut milk; bring to a simmer.
- Add vegetables and cook until tender, 15-20 minutes.
- Season to taste and garnish with cilantro.
- Serve with rice or naan.
