Ingredients

  • 2 tbsp oil
  • 1 onion, diced
  • 3 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp curry powder
  • 1 can coconut milk
  • 2 cups mixed vegetables (potato, cauliflower, peas, carrots)
  • 1 can diced tomatoes
  • Cilantro

Instructions

  1. Sauté onion, garlic, and ginger in oil until soft.
  2. Add curry powder, cook 1 minute until fragrant.
  3. Add tomatoes and coconut milk; bring to a simmer.
  4. Add vegetables and cook until tender, 15-20 minutes.
  5. Season to taste and garnish with cilantro.
  6. Serve with rice or naan.
