Ingredients

  • A handful of arugula
  • 4.5 cups watermelon
  • 0.5 cup blackberries
  • 0.75 cup feta cheese
  • 0.75 small cucumber cucumber
  • 3 tbsp red onion
  • 3 tbsp fresh mint
  • 3 tbsp roasted pistachios
  • 3 tbsp olive oil
  • 1.5 tbsp fresh lime juice
  • 1.5 tbsp fresh orange juice
  • 0.25 tsp red pepper flakes
  • 0.25 tsp flaky sea salt

Instructions

  1. In a small bowl, whisk together the olive oil, lime juice, orange juice, red pepper flakes, and a pinch of flaky sea salt until combined.
  2. Arrange the arugula, watermelon and blackberries on a serving platter or shallow bowl.
  3. Add the cucumber, red onion, and mint, over the watermelon.
  4. Add the feta in chunky crumbles.
  5. Drizzle the dressing over the salad.
  6. Sprinkle with chopped pistachios and enjoy immediately while cold and crisp.
